We distill Spy Hop Gin with San Juan Island botanicals: wild roses, blackberries, lavender, Madrone bark and Douglas fir. To this very local run in our small copper alembic pot still, we add hand gathered local tiny juniper berries. They create a unique juniper flavor, different from our usual organic juniper berries, with a delicious bitter note on the finish.
